Grandma Sena's Potato Salad


3 pounds potatoes
mayonnaise or Miracle Whip, as needed
4 stalks celery, sliced very thin
8 oz. green olives, stuffed with pimientos, sliced thin
1 large sweet onion, finely chopped
2 carrots. shaved with a vegetable peeler
9 eggs, boiled and chopped
3 eggs, boiled and sliced
paprika

Cut the potatoes into chunks and simmer until done. Mix well with the other ingredients except the three sliced eggs. Cover with egg slices. Sprinkle generously with paprika. Chill before serving.
