Do they eat Lamb in Asturias? Does anyone have some lamb recipes?

Efectively, yes, Eric. Lamb is quite popular, wether in chops (chuletines de cordero) or roasted in many ways.

However, the undisputedly most popular way of cooking the lamb is the one named "a la estaca".

This is, you get the whole animal opened and eviscerated, trespassed with an iron pole and it legs kept open thanks to another pole as well. Once it's in this position and well attached to the ground it's properly and constantly seasoned with a sauce made out with parsley, garlic, lemon, bayleaf, water, white wine, olive oil, sweet paprika and onion (cayenne is optional); while it gets roasted by a strong fire fed by oak wood.
