Salt Cod Omelette

CODFISH OMELETTE

salt cod, soaked in several changes of water for at least 24 hours
3 eggs
olive oil


Soak the salt cod in water for at least 24 hours, changing the water several times. Bone the cod it it has bones, and shred it well. Use as much or as little as you like. Mix the salt cod with the 3 beaten eggs, and fry in hot olive oil, turning the omelette once by inverting it onto a plate and sliding it back into the frying pan.
