Longing for Longaniza

Hola Amigos,
I have tasted Spanish Longaniza sausage only once in my life. After our mother passed away in 1959, Dad took my younger brother and me to visit his sister, Elvira, in Fairmont, WV.
For breakfast, she fixed us Spanish sausage and eggs. Dad told us that it was made there locally, and that we had never eaten it before. I have never had it since and out of curosity, I have been searching for a recipe on the internet to make my own. That research is one tough assignment. I believe that the ingredients and directions must be a well kept secret.
I have been told that it is still being made in the Clarksburg area, and that one might find it in October at the Spanish Festival held at Stonewood, WV.
