Octopus - First Recipe

OCTOPUS
1 octopus, fresh or frozen
1 large onion, whole
1 large onion, chopped
3 garlic cloves, crushed
parsley, chopped, as desired
red pepper, as desired
salt, as desired
flour
1 cup white wine
1 tbsp sugar
1 can tomato puree
4 potatoes, cooked and cubed
1 can pimientos, chopped
Clean and wash the octopus, and boil it (barely simmering) with onion, garlic, parsley, salt and hot pepper. Save the water from cooking the octopus. Fry onion, garlic, parsley, and hot pepper until the onion is trasnparent. Add enough flour to make a roux. Add some of the water saved from cooling the octopus, white wine, sugar and tomato puree. Cook until thickened, whisking or stirring constantly. Thin with water or more white wine if necessary. Pour the sauce over the octopus. Add pre-cooked potatoes and pieces of pimiento. Mix and keep warm in the oven. Serve with crusty bread.
